Mason Jars
Preserving food in a glass home canning jar had now been taken a step further. A type of the original enclosure still is in use today, although improved with various other closure designs. These days, home canning has brought mason jars back as gardeners and chefs want to produce and preserve their own sauces and jams . In 1858, John Landis Mason developed and patented a shoulder-seal jar with a zinc screw cap. A mason jar keeps the contents at a lower pressure than the atmosphere. The typical jars used for home canning use are named Mason Jars.
